The mountain loves white. Here, on clear days, more than 300 metres up on the foothills of the Montagne Noire, you can make out at daybreak the snow-capped Pyrenees, like an endless sculpture in alabaster. From up there it becomes obvious: the mountain loves white.

Grape & terroir

On these high soils, too exuberantly mineral — graphite, flint — to sit with the quiet tannins of a red, only a white grape belongs. It is the intelligence and finesse of Chardonnay, able to lift a terroir of strong personality, that let the mountain give birth to Gypse.

Where the mountain looks out to the Pyrenees

More than three hundred metres up, on the foothills of the Montagne Noire, clear mornings reveal the snow-capped Pyrenees in the distance. Here the soils are too mineral — graphite, flint — for anything but white. Chardonnay finds ground to match, able to absorb this intensity without ever betraying it. Gypse was born of that gaze cast from the mountain towards a horizon of stone and snow.
