La Belle Aude 2025
A white made for pleasure, full yet balanced — the kind you open as readily for drinks with friends as for a smarter dinner.
Tasting notes
From its golden-yellow colour rise scents of toast, blond tobacco, pineapple and white peach. The palate, rich and full, carried by just enough acidity, gathers these aromas and extends them with hints of gingerbread.
Terroir & grapes
Made from 90% Marsanne and 10% Vermentino, this white Minervois ripens on a singular terroir, at the foot of an ancient glacier, on limestone and marl torn from the mountain by the ice.
Winemaking
The grapes, on the edge of over-ripeness, are picked in the cool morning hours and pressed straight away. The must is cold-settled and fermented at controlled temperature. Ageing continues naturally on fine lees, in tank, for three months before bottling.

In the tracks of an ancient glacier
At the foot of a glacier that vanished thousands of years ago, the limestone and marl it tore from the mountain form a singular terroir, almost frozen in time. Marsanne and Vermentino come into their own there in the cool hours, early in the morning, before the sun takes over. A mineral, glacial memory that gives La Belle Aude its very particular roundness.
