Grape & terroir
Mourvèdre — child of the Levant, the Mediterranean counterpart of Cabernet Sauvignon — makes up the entire cuvée. To break its silence and release all its energy, it needed a terroir to match: an amphitheatre of fine, sandy clays nestled in the garrigue, facing south-west, resting on a thick bed of crushed sandstone. It also needed old vines, kept to very low yields.
Winemaking
Hand-picked and destemmed, then a long maceration of 20 to 45 days, to extract without forcing.

A sandstone amphitheatre made for Mourvèdre
Nestled in the garrigue, facing due south-west, an amphitheatre of fine, sandy clays rests on a thick bed of crushed sandstone. It is here, sheltered from the wind and facing the setting sun, that the old Mourvèdre vines, kept to very low yields, at last find the strength to speak. A reserved terroir, like the wine it brings forth.
